Very Green Salad Recipe

When we make salad on Iona it is for dozens of people. I do not have the measures for making this salad for a family of four. However, I’ll give you the list of ingredients and you can portion things the way you like. I do have the recipe for the dressing. And like any good salad it’s the dressing that brings the dish come together if you ask me. So here you go…

Salad

1 white cabbage chopped finely and then pounded to make it tender

piles of kale ripped to manageable pieces and then blanched and cooled

a bunch of green spring onions chopped

pile of parsley chopped

1 or 2 granny smith apples with skins on chopped

Dressing

1 1/2 cups olive oil

juice of 4 lemons and 1 lime

3 Tbsps runny honey

1 tsp chili flakes

Mix well

Add to salad, toss. Cover and refrigerate. Serve with confidence!
