Green Breakfast

Going green is not just for sustainability, sometimes you can go green for breakfast. Veggies before noon will make you feel virtuous.

When we visited Japan I recall thinking the breakfast buffet was strange yet wonderful. We developed a taste for fishy and other interesting things in the morning. Anyway when I ran across this recipe for miso oatmeal I gave it a second look. Your initial reaction may be to pass, but if you are looking for a little something savory in the morning give this a try. It will surprise you.

Miso Oatmeal

1 c water

1/2 cup rolled oats

1 tsp miso paste or to taste (I use a heaping 1 tsp measure which probably ends up being more like a Tbsp)

1/4 fresh chopped spinach or to taste (again I use more than called for probably 1/2 cup)

10 walnut haves (I use 2 Tbsps pre-chopped pieces)

fish flakes (optional) (I use Futumake sprinkles)

1/2 avocado peeled, pitted and cubed (I never add this but I can see the appeal)

Bring the water to a boil in a saucepan, add the oats and miso paste. Cook one minute.

Add spinach and walnuts. Continue cooking till oatmeal is the desired consistency, about 5 minutes.

Serve oatmeal in a bowl, top with avocado and sprinkle with Futumake.

Savory goodness, and the walnuts stay crunchy!
