Sweet Potato Soup Recipe

This yummy soup also makes an excellent sauce for fish or poultry. And if there is any leftover it makes an interesting salad dressing, just add a little olive oil.

1 pound large dark red sweet potato (usually one will do it) peeled and diced

1 medium sweet onion, chopped

4 cloves of garlic, pressed or minced

1/4 tsp cinnamon

1/4 tsp salt

1/4 tsp ground pepper

1 1/2 cups fat free chicken stock

2 cups orange juice

Combine the sweet potatoes and onion in a large saucepan and cook, covered, over low heat until the onion is soft and transparent, about 12 minutes. (I sometimes give this a dash of olive oil to get going.)

Add the garlic, cinnamon, salt, and pepper and cook 3 more minutes.

Add the chicken stock and orange juice and cook until the sweet potatoes are soft, poke them with a fork to check

Spoon the mixture into a blender and blend until smooth.

Serve hot or cold.
